Garlic Bread Cauliflower

This is an incredibly easy dish to make; while roasting the cauliflower, prepare the butter. The cauliflower turns out slightly crispy and oh so delicious. If someone still says they don't like cauliflower after eating this then there's something wrong with them because this tastes very far from vegetable-y. The butter mixture used here is decidedly reminiscent of garlic bread.
Ingredients
  • 1 head of cauliflower, cored and cut into small florets
  • 1-2 tbsp of avocado oil
  • Salt and Pepper
  • 2 tbsp softened butter or ghee
  • 1 tsp sea salt
  • 1 clove of garlic, minced (I like to use a garlic press)
  • 1 tsp fresh rosemary, chopped (2 sprigs)
  • 1 tsp fresh thyme (leaves from 4-5 sprigs)
  • 1 tsp fresh parsley, chopped plus more for garnish
Instructions
  1. Preheat oven to 425 F
  2. Line large baking sheet with parchment paper or aluminum foil.
  3. Drizzle avocado oil on baking sheet.
  4. Add chopped cauliflower to sheet and stir with wooden spoon until coated well with oil.
  5. Season cauliflower with salt and pepper.
  6. Place in oven and bake for 10 minutes. At the 10 minute mark, stir the cauliflower and return to oven for another 10 minutes. Edges should start to brown.
  7. While cauliflower is roasting, prepare butter. Stir garlic and herbs into butter or ghee until well combined.
  8. Heat butter mixture gently in microwave.
  9. Once cauliflower is ready, drizzle butter mixture over. Stir to combine and serve.
