Meatless Monday: Simple Vinaigrette

This is a 3 ingredient, super simple vinaigrette that whips up in minutes. It's garlicky and lemony but balanced just so.
Ingredients
  • 55g garlic (approximately 12 garlic cloves), peeled and roughly chopped.
  • 300ml (1.25 cups) lemon juice
  • 550ml (2.25 cups) olive oil
  • Salt and pepper to taste
Instructions
  1. Place all ingredients into a tall mason jar or blender cup.
  2. Blend thoroughly with an immersion blender until fully emulsified and a bright yellow colour.
  3. Serve with your favourite salad.
